It’s the new year and I have some bonus cooking videos from our summer of 2021 in Castropignano, Italy that you will enjoy! In episode #46 we are making Pasta Alla Genovese with special guest Italian Mother Melissa Ciancio. While I was in Italy we took a trip to Naples and ever restaurant I went had “Pasta Alla Genovese” on their menu. It also so happens to be Melissa Ciancio’s sons favorite pasta dish that she makes for them. One day she invited me over her house to try #PastaAllaGenovese and it was delicious. I thought it was going to be like Bolognese, but I was wrong. It was better! I love onions and it’s like an onion sauce with meat and pasta. I actually liked it better then Bolognese and now I know why her boys love it so much. Watch to get the step by step instructions on how you can make this Italian dish for your family and friends. INGREDIENTS:
– Lots of Yellow Onions: (for every 1 Kilo of meat you must use 2 Kilos of Onion)
– 1/2 Kilo Veal Chunks
– 1/2 Kilo Ground Veal and Ground Pork
– Vegetable Broth (with Carrots and celery )
– Carrots
– Celery
– Bay Leaf
– Salt
– Pepper
– 1 to 2 Cups White Wine
– Olive Oil
– 1 Tablespoon of Butter
– Ziti Pasta
– Parmesan Cheese
***For 1 kilo of meat you use 2 kilos of onion.
